- bed of thinly sliced slow roasted beets topped with baby arugula, goat cheese, pistachio & finished with a honey lemon vinaigrette

- braised pork shank, barolo wine plum tomato reduction, served over creamy spinach polenta
- Barramundi Filet Mediterranean
- filet of barramundi egg battered and sautéed with kalamata olives, capers, & grape tomatoes in a white wine garlic sauce over saffron risotto
